Preheat oven to 425 degrees. Spray two 12 muffin cups with nonstick cooking spray. In a small bowl, mix together:
1 heaping cup grated cheddar cheese
1/2 heaping cup finely chopped ham

I love burgers and am always looking for ways to change them up a little. This is a great alternative burger recipe. You can serve it with soy sauce mayo sauce (1 tablespoon soy sauce and 1/4 cup mayo) or add sliced cucumber for a refreshing and pretty finish to a great burger. Asian Coleslaw is a great side to this burger instead of french fries as well.
In a large bowl, mix together:

1/4 cup fresh cilantro (1 tbsp tube)
1 green …

Buffalo Chicken Salad

Buffalo Chicken Salad is a great dish to serve at a sports party or for watching Monday night football. It is so easy and reminds me of the buffalo wings at a restaurant, but not as heavy. Plus the carrots and celery give the salad a great crunch.

I love ribs and am always looking for different ways of preparing them besides BBQ sauce. This is an excellent take on Southwestern flavor. The ribs are sweet and spicy and so easy to prepare.

juice from 2 limes
1/4 cup honey
1/4 cup fresh chopped cilantro
6 garlic cloves, minced
1 jalapeño chile, seeded and minced
1 tablespoon paprika
1 1/2 teaspoon salt
1 teaspoon pepper
In 1 or 2 large zippered plastic bags, place:
2 baby back rib racks, cut into 2 pieces (about 5 pounds)
Pour marinade …

Dry rib rubs can make or break a barbecue meal. This recipe below is my favorite dry rub for baby back pork ribs. I love a dry rub because it is so flavorful and much easier to eat than traditional BBQ sauce. While I typically use this rub on baby back pork ribs, you can also use it on chicken breasts. The recipe below accommodates about 5-7 pounds of baby back pork ribs.
Mix in an airtight container for up to 8 weeks:
2 tablespoons pepper
2 tablespoons paprika
2 tablespoons onion powder
2 …

These “cigars” can be served as a meal or make a great appetizer. The chipotle peppers add just enough spice to make them so flavorful and exciting.
Preheat over to 400 degrees. In a large mixing bowl, combine:
1 package of ground chicken or turkey
2 scallions, chopped
2 garlic cloves
3 tablespoons chipotle flavored salsa
1 cup cheddar cheese
3 tablespoons cilantro
Once combined, place meat mixture into a pastry bag or large plastic baggie, cutting off the tip, so as to use as a pastry bag. For the next portion, you will …

This is a great dish to serve at a large gathering, either as a side or main course.  It tastes much richer and heavier than it actually is.

For this recipe I like to use poached chicken breasts, but you could easily substitute already cooked rotisserie chicken to save time. Additionally, you can make the enchiladas the day before, store in the refrigerator and cook just before serving.

1 cups sour cream
1 10oz can cream of chicken soup
1 4oz cans of chopped green chiles, drained
3 bunches of green onions, chopped
3/4 cup shredded Colby Jack cheese
1/4 cup chicken or vegetable broth
Grease a 13×9 inch baking pan. Place …
