This is a recipe I received from my mother-in-law which I thought was perfect to pass along for Superbowl. The further ahead you make this dish the better it gets as the flavors blend beautifully together.

Sloppy Joes

I know sloppy joes remind people of middle school lunches, but I think they deserve a revised second look. This sloppy joe recipe is amazing and full of different vegetables and rich flavors, so kids and adults will enjoy it alike. I like to serve the sloppy joes on broiled or grilled thickly sliced sourdough, instead of the traditional hamburger bun.

This is a wonderful pork recipe which you can cook in the oven or roast on the grill. It reminds me of deviled eggs, but much better.
In a small bowl, whisk together:
1/3 cup Dijon mustard
2 tablespoons paprika
1/4 cup Worcestershire sauce
1/4 cup brown sugar
1/2 cup olive oil
1 1/2 tablespoons kosher salt
1/2 teaspoon pepper
Set aside 1/4 cup of the marinade and refrigerate. Pour the remaining marinade over 2-3lb boneless pork loin roast in a shallow dish. Cover and refrigerate over night, turning once. Take meat out of refrigerator …

Baked beans are a great side dish to serve at any picnic or BBQ.  They are an easy side dish to make and go great with burgers or ribs.
Preheat oven to 325 degrees.  In a medium sized casserole dish, mix together and set aside:
3 cans white beans, such as navy (rinsed and drained)
1 and 1/4 cup chicken broth
In a large skillet, over medium heat, cook:
4 slices of bacon, roughly chopped
Once bacon begins to release it’s fat, add to the skillet:
1 tablespoon olive oil
1 small yellow onion, chopped

Our friend, Kirsten, makes these stuffed green chilies as an appetizer when we get together for dinner parties.  My husband absolutely loves them and you will too because they are so easy and delicious.
Preheat oven to 350 degrees.  Slit and rinse:
1 can (28oz.) of Ortega whole green chili
Make sure to remove all seeds and allow chilies to drain on paper towels.  Meanwhile, on a cutting board, slice  8oz. of Monterey Jack cheese into long wedges small enough to fit into chilies.

My husband loves burgers so I am always looking to find new ways to prepare them.  This recipe is a wonderful twist on Caesar salad.  For a really decadent treat, I like to top them with a slice or two of bacon.
In a large mixing bowl, combine:
1-1 and 1/4 lb ground chicken
2 cloves garlic, minced
2 bunches of green onions, chopped
zest from 1 lemon
1/2 cup grated Parmesan cheese
salt and pepper to taste

This is a great cheese dip for chips or steamed vegetables, like broccoli.  So easy to make and perfect for large crowds or parties, such as a Superbowl celebration.
In a large skillet, heat one tablespoon of oil and cook over medium heat.  Once oil is warm, add:
1 onion, minced
2 garlic cloves, minced
Once onion is soft and garlic is golden, reduce heat to low and add:
1 can (16oz) chopped tomatoes, drained
2 cans (4oz) chopped green chiles, drained
2 tablespoons Worcestershire sauce

This is a healthier take on fried chicken tenders, since it is baked.  It is so easy to make, plus both my two year old and husband love them.  These chicken tenders are great for dinner, appetizers, or parties.  You can serve them alone or with your favorite dipping sauce, try my homemade BBQ Sauce recipe or Leigh’s Marinara Sauce.
Preheat oven to 400 degrees.  Salt and pepper 2 pounds of washed chicken tenders.  In a large shallow dish, put:
1 cup flour

This is an ideal dish for a gathering because it is easy finger food.  Perfect for a football party, picnic, or informal cocktail party.  You can serve this chicken dish as an appetizer with your favorite sauce to dip into (try Leigh’s Marinara Sauce) or put it on top of a salad or pasta dish and enjoy it as a meal.

This is a perfect recipe for a Superbowl party because it makes a large amount of meat and is cooked in the crock pot so you don’t have to be in the kitchen.  The pulled pork goes great on sandwich or hamburger rolls. I like to serve it with my Asian Coleslaw and french fries.

In a small bowl, mix together:
2 cups ketchup
3 tablespoons apple cider vinegar
1 tablespoon onion powder
5 cloves of garlic, minced
