I love burgers and am always looking for ways to change them up a little. This is a great alternative burger recipe. You can serve it with soy sauce mayo sauce (1 tablespoon soy sauce and 1/4 cup mayo) or add sliced cucumber for a refreshing and pretty finish to a great burger. Asian Coleslaw is a great side to this burger instead of french fries as well.

One of my closest friends and mother of twins, sent me this great salad recipe. She is a great cook and very busy, so this recipe is perfect when you have your hands full. It is easy to make and has a similar taste to a 1905 Salad.
2 T Dijon mustard
2 T red wine vinegar
1 clove garlic, grated
¼ c extra virgin olive oil

This is my all time favorite tuna recipe. Cooking the tuna over the thyme gives it a rich, smoky flavor. It is a great dish to serve at a dinner party because all the prep work can be done ahead of time. The key is to get good quality ahi tuna (fresh, sushi-grade). Other herbs can be swapped out for the thyme, such as rosemary or tarragon. Additionally, the tuna can be switched to chicken or pork chops as well.

This is a great summer dinner. Halibut is such a light flaky fish and the dish looks so beautiful with the colorful watermelon and green onions.  I love to serve this dish on a bed of spinach leaves or over my Toasted Coconut Rice.
In a large marinating dish, using a fork mash:
1 cup of watermelon cubes
1 tablespoon of raspberry vinegar
1 tablespoon of olive oil

I love curry, but my husband does not, so I am always looking for recipes that have a very mild curry flavor. This one for shrimp is great because you can barbeque the shrimp or pan fry them. I like to serve them along side rice.
In a large bowl, combine:
1/2 cup coconut milk
2 tablespoons brown sugar
1 tablespoon fresh grated ginger

This a classic marsala chicken dish with a slight twist because of the lemon flavor which I find so refreshing. This chicken is great over pasta, risotto, or even a bed of baby spinach.
Using a meat tenderizer, pound thin, four chicken breasts. Coat chicken in flour mixture containing:
1 cup flour
2 tablespoons paprika
2 teaspoons salt
1 teaspoon pepper

This is one of my favorite salads. It is perfect for a summer dinner or brunch. The sweet dressing and pretty strawberries make it seem like a dessert. You can add grilled or poached chicken and cubed avocado to make it into a meal as well.
In a large bowl combine:
1 pound washed spinach leaves
*1 pint of sliced washed strawberries
about 1/2 cup Poppy Seed Dressing (which follows)

This is one of my favorite brunch dishes. It is great for parties because you can make it the day before and store in the refrigerator before cooking. I have served on Christmas morning. I put it in the oven while we unwrapped presents and then served it right after, without having to be in the kitchen all morning.
In a large skillet over medium heat, combine:

Add the following ingredients into a crock pot:
1 pound skinless, boneless chicken breast, cut into small 1/2 inch pieces
1 cup frozen or fresh corn kernels
1 can condensed cream of potato soup
1 4oz can of diced green chile peppers, drained
2 tablespoons fresh chopped cilantro
1/2 package of taco seasoning mix
3 cups chicken or vegetable broth
