Pear, Avocado and Gorgonzola Salad

The pear, avocado and gorgonzola salad is a great salad! The pear and Gorgonzola cheese compliment each other so deliciously. This is a great starter salad or you could put grilled chicken or shrimp on top and make it into a meal.

Blueberry Pie

This is my favorite pie to make because it is so easy to make and tastes so good to eat.  Fresh blueberries are always the best, but frozen taste wonderful in this pie as well.

I prepared this tart for Easter brunch this year and it turned out so beautifully and was delicious.  The flaky and buttery tart complimented the bacon and egg perefectly.  This would be a great dish to serve for Mother’s Day or Father’s Day brunch or a bridal or baby shower.
Thaw one sheet of puff pastry dough according to the directions on the package (you can find puff pastry sheets in the freezer section of the grocery store).  Preheat oven to 425 degrees.

This is a delicious pancake recipe that you can feel good about eating because it calls for whole wheat flour.  The pancakes are surprising light and fluffy.  You could also add blueberries or bananas to add additional flavor.
In a medium bowl, combine:
1 3/4 cup milk
1/4 cup vinegar
Let stand for about 5 minutes.  In a smaller bowl, combine:
2 cups whole wheat flour
3 tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon salt
Stir dry ingredients together.  To the milk and vinegar mixture, add:
2 eggs, lightly beaten
1/4 cup vegetable oil

My husband loves burgers so I am always looking to find new ways to prepare them.  This recipe is a wonderful twist on Caesar salad.  For a really decadent treat, I like to top them with a slice or two of bacon.
In a large mixing bowl, combine:
1-1 and 1/4 lb ground chicken
2 cloves garlic, minced
2 bunches of green onions, chopped
zest from 1 lemon
1/2 cup grated Parmesan cheese
salt and pepper to taste
