This is a great dressing to serve along side any Mexican food or grilled meat. The cilantro leaves look so pretty in this orange colored dressing. You can even use it as a marinade for chicken, pork or fish.
Combine in a small bowl:
3 tablespoons lime juice
1 1/2 tablespoons honey
3 tablespoons olive oil
3 tablespoons canola or vegetable oil
1 tablespoon finely chopped cilantro
1/2 teaspoon minced garlic

This is my all time favorite tuna recipe. Cooking the tuna over the thyme gives it a rich, smoky flavor. It is a great dish to serve at a dinner party because all the prep work can be done ahead of time. The key is to get good quality ahi tuna (fresh, sushi-grade). 1 inch piece of grated ginger
2 minced garlic cloves

1 tablespoon fresh grated ginger
2 tablespoons fresh chopped cilantro
1 tablespoon curry powder
1 tablespoon lemongrass puree
