Starting Your Day Off Right: Rasberry Corn Muffins

This recipe celebrates natural, fresh ingredients and the pure enjoyment of a healthy start to your day. Instead of buying a high calorie muffin, make a healthy batch of your own to enjoy for the entire week using all natural ingredients.
Preheat oven to 375 degrees. Line a 12 cup muffin pan with paper liners or grease with cooking spray. In a large mixing bowl, mix together:
2 cups low-fat buttermilk
1/2 cup apricot nectar/juice
3 tablespoons grapeseed or olive oil
2 teaspoons vanilla extract
1 teaspoon orange zest
3/4 cup sugar
Once combined add and stir until just combined:
1 1/2 cup flour
2 1/2 cup yellow cornmeal
1 tablespoon baking powder
3/4 teaspoon salt
Meanwhile, using an electric mixer, beat:
4 egg whites
3/4 cup sugar
Beat for about eight minutes or until stiff peaks form. Gently fold the egg white mixture into the batter and then add:
2 cups raspberries (fresh or frozen). Do not over mix batter. Divide into muffin cups and bake about 30-35 minutes or until a tooth pick comes out clean. Remove from pan and cool muffins on a rack.
Makes 12 muffins
