Fried Avocados

Our family loves avocados. We probably eat guacamole at least once a week, if not more. And avocados in a family salad is a given on any weeknight. However, without a doubt, fried avocados are our favorite avocado treat!

Fried Avocado Ingredients:

2 eggs, beaten
1 1/4 cups panko
1/4 cup flour
1/4 teaspoon kosher salt
2 ripe medium Hass avocados
Canola oil

Step 1: Pit, peel and slice the avocados into 1/2 inch wedges

Step 2: In a medium saucepan, heat 1 1/2 inches of canola oil until it reaches 375 degrees on a deep frying thermometer

Step 3: Mix the flour and salt in a small plate

Step 4: Put the eggs and panko (separately) in two other small plates

Step 5: Dredge the avocado wedges in flour, dip in the egg, then coat in the panko (repeat for all avocado wedges)

Step 6: Fry the avocado wedges (four at a time) in the oil until golden brown (45 to 60 seconds).

Step 7: Transfer the fried avocado onto a plate lined with paper towels. Sprinkle with salt to taste.

    Panko is a type of bread crumb used in a lot of Japanese dishes and you should be able to buy it at any store. If it is not by other bread crumbs check by the international food for Panko crumbs. Or you could use bread crumbs, as well.
