Blueberry Pie

This is my favorite pie to make because it is so easy to make and tastes so good to eat.  Fresh blueberries are always the best, but frozen taste wonderful in this pie as well.

Preheat oven to 375 degrees.  On a lightly floured surface, roll out one of the two chilled pie pastry crusts to fit into a 9 inch pie plate.  Once you have placed the pasrty into a pie plate, using a fork, puncture a few holes in the bottom of the pastry.  In a large bowl, mix together:

6 cups fresh or defrosted frozen and rinsed blueberries

1/2 cup sugar

1/4 cup flour

1/8 teaspoon salt

1 tablespoon lemon juice

1/4 teaspoon cinnamon

4 tablespoons of butter, cut into small pieces

Spoon blueberry mixture into pie crust.  Sprinkle an additional 3 tablespoons of sugar on top of the uncooked blueberry pie.  On a lightly floured surface, roll out second chilled pie pastry into a 9-inch circle.  cut into long strips and lace ontop of the pie.  Using your fingers, press pie crust edges together, cutting away any excess pie crust.  Place foil along the edges to prevent the crust from burning.  Cook for 50 minutes.  Remove foil and cook an additional 10 minutes or until crust is golden.

Serves 8
