This lasagna recipe is amazing. It has such wonderful flavors because of the roasted vegetables. Roasting the vegetables takes a little bit more time than just browning them in a skillet, but it is worth it. My husband and two year both loved this dish.
Preheat oven to 500 degrees. On a large baking sheet, sprinkle 2 tablespoons salt over:

This is a simple delicious tomato sauce that can be used in pasta dishes, pizzas, or for meat dishes as well. It is a great base for soups as well.
In a blender, on lowest setting, puree:
2 cans (28oz) of whole peeled plum tomatoes, undrained
In a large pot, heat, over medium-high heat:
3 tablespoons olive oil
4 garlic cloves, minced
1 tablespoon onion powder

Chicken Milanese

This is a great and easy Chicken Milanese dish that is one of my husband’s favorite. There are so many ways to serve this and variations that this dish never gets boring. My favorite way to eat Chicken Milanese is on a bed of arugula with lemon wedges, salt and pepper. Of course it can be served over any pasta, rice, or risotto as well.

This is a great light dish that is easy to prepare.  I love to serve this salmon with orzo or pasta.  The sun-dried tomatoes provide such a great flavor to the salmon and the spinach is packed full of vitamins.
Preheat oven to 350 degrees.  In a large skillet, over medium high heat, cook:
3 cups chopped leaf spinach
Once spinach is wilted and liquid has evaporated, remove pan from heat.  In a small bowl, mix together:
1/4 cup low-fat ricotta cheese
1/4 cup chopped sun dried tomatoes

Chocolate Lava Cakes

Although this chocolate lava cake is rich, it is not overly heavy. It is perfect for a Valentine’s Day dinner celebration, New Year’s Eve, or any other special occasion. It is wonderful dessert for small dinner parties because it can be prepared ahead of time and baked just before serving.
