Sausage Apple Almond Stuffing

This is a great stuffing for Thanksgiving. I made it for the first Thanksgiving dinner I prepared and loved it because the sausage was a nice change of meat from all the turkey. The apple flavor makes it just a little sweet and so delicious.

Preheat oven to 400 degrees. In a large baking pan, cook:

1 lb of sourdough bread, crust trimmed and cubed (1/2 pieces)

Cook for about 10 to 12 minutes, turning bread to until lightly golden. Transfer bread to a large bowl. In a large frying pan, over medium high heat, cook:

3/4 lb bulk pork sausage, breaking up with a fork, as you cook

Once browned, transfer to the bowl with bread. In the same frying pan, add:

1/4 cup butter, melt

1/2 yellow onion, chopped

3 celery stalks, chopped

2 large tart apples, peeled and chopped

3 tablespoons of fresh chopped thyme

Saute for about 8 minutes or until tender. Add to the bread and sausage mixture. In the same frying pan, add:

2/3 cup chicken stock

Bring to a boil and scrap any brown bits from the sides. Turn off heat and add to the bread and sausage mixture. Mix in:

1 cup toasted chopped almonds

1/2 cup chopped parsley

salt and pepper to taste

2 beaten eggs

Mix all ingredients together. Grease a 13×9 inch baking dish and spoon stuffing into dish. Cover with foil and bake for 30 minutes at 325 degrees. Take off foil and cook until top is crisp. About another 25-30 minutes.

Makes about 10 cups, serves about 8-10
