Herbed Sweet Potatoes

If you like sweet potatoes this is an easy and delicious side dish. The lemon and thyme really compliment the flavor of the sweet potatoes. I was very pleasantly surprised when I made this dish. This would be a great alternative to plain old mashed potatoes on Thanksgiving.

Preheat oven to 400 degrees. In a medium bowl mix together:

4 large peeled and sliced sweet potatoes (about 1/2 inch thick)

3 tablespoons olive oil

1/2 tablespoon kosher salt

1 teaspoon pepper

Once potatoes are coated with oil, salt and pepper, arrange in a single layer in a large 2 quart baking dish or 9×13 greased glass baking pan. Cover potatoes with foil and bake for 20 minutes. Remove foil and evenly sprinkle potatoes with:

1/2 lb crumbled feta or goat cheese

1/3 cup pine nuts

1 tablespoon fresh chopped thyme

Return to oven and bake an additional 10 minutes or until cheese is golden and the sweet potatoes are tender. Remove from oven and drizzle with the juice from 1 lemon. Serve immediately.

Serves 4-6
