Buffalo Chicken Salad

Buffalo Chicken Salad is a great dish to serve at a sports party or for watching Monday night football. It is so easy and reminds me of the buffalo wings at a restaurant, but not as heavy. Plus the carrots and celery give the salad a great crunch.

In a large salad bowl, combine:

2 hearts of romaine lettuce, chopped or one bag of romaine salad greens

1 cup shredded carrots

3 ribs of celery, chopped

In a small bowl combine:

1/2 cup ranch dressing

1/2 blue cheese crumbles

Mix well and pour onto salad and toss.

In a large skillet, on medium heat, add:

1 tablespoon olive oil

1 tablespoon butter

Once melted and sizzling, add:

1 lb chicken tenders, chopped into bite size peices

Season chicken with salt and pepper and cook for about 3 minutes. Once chicken in golden on the outside, add:

1/4 cup hot sauce

Reduce heat to simmer and cook another five minutes or until the chicken is done. Once cooled, top tossed salad with chicken and serve.

Serves 2 as main course, 6 as starter or side
