Tina’s Summer Turkey and Aspargus Salad

One of my closest friends and mother of twins, sent me this great salad recipe. She is a great cook and very busy, so this recipe is perfect when you have your hands full. It is easy to make and has a similar taste to a 1905 Salad.

2 T Dijon mustard

2 T red wine vinegar

1 clove garlic, grated

¼ c extra virgin olive oil

4 springs tarragon, leaves removed and chopped

Salt and ground black pepper

1 bunch asparagus, woody ends discarded, blanched and thinly sliced on angle

*1 lb deli-sliced turkey, cut into very thin strips

½ lb deli-sliced Swiss cheese, cut into very thin strips

Romaine, chopped

1 Baguette

In a medium-sized pot, boil water. Once water is boiling, plunge asparagus in water for one minute. Remove asparagus and immediately place in a bowl of ice water to cool.

In a medium-sized bowl, whisk together Dijon, vinegar, and garlic. Add olive oil in a steady stream while whisking; then add tarragon, salt and pepper to make the dressing.

Add sliced asparagus, turkey, and cheese and toss well to coat.

Serve over lettuce with crusty bread.

*Ham may be substituted for turkey if preferred.

Serves 2 as a main course or 4 as a starter salad
