Thyme Grilled Ahi Tuna Steaks

This is my all time favorite tuna recipe. Cooking the tuna over the thyme gives it a rich, smoky flavor. It is a great dish to serve at a dinner party because all the prep work can be done ahead of time. The key is to get good quality ahi tuna (fresh, sushi-grade). Other herbs can be swapped out for the thyme, such as rosemary or tarragon. Additionally, the tuna can be switched to chicken or pork chops as well.
Before preparing the tuna, soak 2 bunches of fresh thyme leaves in a bowl of cold water, for at least fifteen minutes. In a small bowl for the herb rub, combine:
1 tablespoon minced fresh thyme or 2 teaspoons dried thyme
2 teaspoons kosher or sea salt
1 teaspoon pepper
Coat 4 tuna steaks (about 1 inch thick) in olive oil. Sprinkle the herb rub on both sides of the fish. Just before putting the tuna on the grill or grill pan, drain the water from the thyme leaves and put directly on the grill or grill pan. Place tuna steaks on the thyme, cooking for about 3-4 minutes on each side, for rare. Garish with a few thyme sprigs and serve with lemon wedges if desired.
