Dry Rub (Pork Ribs or Chicken)
Dry rib rubs can make or break a barbecue meal. This recipe below is my favorite dry rub for baby back pork ribs. I love a dry rub because it is so flavorful and much easier to eat than traditional BBQ sauce. While I typically use this rub on baby back pork ribs, you can also use it on chicken breasts. The recipe below accommodates about 5-7 pounds of baby back pork ribs.
Mix in an airtight container for up to 8 weeks:
2 tablespoons pepper
2 tablespoons paprika
2 tablespoons onion powder
2 tablespoons brown sugar
1 tablespoon chili powder
1 tablespoon kosher salt
1/2 teaspoon ground sage
1/2 teaspoon nutmeg
1/8 teaspoon cayenne pepper
Rub onto meat before grilling or baking.

You dont have to bake the ribs you can wrap them in a heavy duty foil pouch twice around to lock in the juices and then grill for about 45 minutes then unwrap then finish grilling with your favorite sauce and they always come tender there are more tips and recipes at http://www.cookingandgrillinoutdoors.com
Good dry rub. I doubled up on the chili powder, it was great.

The rub recipe is for how many pounds?
I typically use this recipe for around 5-6 pounds of baby back ribs, but I use the rub pretty liberally, so you could probably stretch it to more if need be. If you are using this recipe for boneless chicken breasts, this rub would coat 7-8 pounds of meat. You can store the rub up to eight weeks in an airtight container, as well.
