Chipotle Chicken “Cigars”

These “cigars” can be served as a meal or make a great appetizer. The chipotle peppers add just enough spice to make them so flavorful and exciting.

Preheat over to 400 degrees. In a large mixing bowl, combine:

1 package of ground chicken or turkey

2 scallions, chopped

2 garlic cloves

3 tablespoons chipotle flavored salsa

1 cup cheddar cheese

3 tablespoons cilantro

Once combined, place meat mixture into a pastry bag or large plastic baggie, cutting off the tip, so as to use as a pastry bag. For the next portion, you will need:

20 sheets of defrosted phyllo dough

4 tablespoons of melted butter

On a cook sheet, roll out 1 sheet of defrosted phyllo dough, and brush with melted butter. (Tip: Keep a damp cloth on the rest of the sheets so they don’t dry out.) Place 1 sheet of phyllo dough onto the sheet of buttered phyllo dough. Keep repeating until you have 5 sheets of phyllo dough stacked on top of each other. Squeeze out 1/4 of the chicken mixture onto the top of the phyllo dough pile, going left to right, starting 1/2 inch in on the left. Roll the chicken, like a burrito, into the phyllo dough, tucking in the sides, as you roll. Repeat this with the rest of the dough and chicken mixture, so that you have 4 long “cigar” rolls. Brush the last of the melted butter on the top of each roll and salt and pepper. Bake for 15 minutes. Serve with Avocado Dipping Sauce (recipe to follow) or sour cream.

Avocado Dipping Sauce:

In a small food processor or blender, combine:

1 ripe, cubed avocado

3 tablespoons cilantro

1/4 cup olive oil

1 teaspoon kosher salt

juice from 3 limes

Blend and serve along side “cigars”.

Serves 4 as a meal or 12 as an appetizer
