Watermelon Salsa Halibut

This is a great summer dinner. Halibut is such a light flaky fish and the dish looks so beautiful with the colorful watermelon and green onions.  I love to serve this dish on a bed of spinach leaves or over my Toasted Coconut Rice.

In a large marinating dish, using a fork mash:
1 cup of watermelon cubes
1 tablespoon of raspberry vinegar
1 tablespoon of olive oil
1/2 tablespoon salt
1/2 teaspoon pepper
Add halibut steaks (1 1/2 pounds total) to marinade and refrigerate for up to two hours. To cook fish either grill over medium heat about 4 to 5 minutes each side or broil about 10-12 minutes, depending on the thickness of the fish. Serve with Watermelon Salsa (recipe to follow).

Watermelon Salsa
In a small bowl, combine:
1 1/2 cup diced watermelon
2 large diced green onions
1 tablespoon raspberry vinegar
1/4 salt
1/4 cayenne pepper (optional)

Serves 4
