Peanut Satay Dipping Sauce

This peanut satay dipping sauce is great with chicken or shrimp. I like to serve it as a side with grilled chicken or over lemongrass coconut shrimp and rice.

In a small saucepan, combine:
3/4 cup crunchy peanut butter
1 cup coconut milk
3 tablespoons soy sauce
1 inch piece of grated ginger
2 minced garlic cloves
juice from 1 lime
2 tablespoons sweet chili sauce

Bring all ingredients to a boil and then reduce to simmer, stirring constantly for about 2 minutes. Remove from heat and set aside until using.

Makes 2 cups
