Eggs Fantastic is a great dish to serve Christmas morning or for a shower because you can do all the prep work a day or two before and don’t have to be in the kitchen the day of a holiday or event – and it serves a large group.
In a large skillet, on medium heat, cook:
1 12oz package of Jimmy Dean Sausage
1/4 pound chopped mushrooms
1/2 chopped onion
salt and pepper to taste
Cook until sausage is brown and liquid is gone from mushrooms (about 7-10 minutes). Drain any remaining liquid and set aside.
In a large bowl, whisk together:
12 eggs
1/4 cup sour cream
Pour egg mixture into a 9×13 inch, greased baking pan and bake for 8-10 minutes at 400 degrees or until set in the middle. Once set, remove from oven and spoon on top, in order:
1/2 cup of salsa
sausage mixture
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese
3/4 cup sliced velveeta cheese
Either refrigerate for up to three days or cook uncovered at 300 degrees for 45 minutes. Let set 5-10 minutes before cutting and serving.
