Barbara’s Vanishing Oatmeal Raisin Cookies

This is my mother-in-law’s recipe for oatmeal cookies and it is the best one I have found. These cookies are moist and delicious.

Preheat oven to 350 degrees. In a large mixing bowl, beat together:
1 cup softened butter or margarine
1 cup brown sugar
1/2 cup sugar
Once butter and sugars are creamy add:
2 eggs
1 teaspoon vanilla
Mix well and then add:
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Once combined, using a large spoon, stir in:
3 cups oatmeal
1 cup raisins
Drop rounded tablespoons onto ungreased cookie sheet and bake for about 10-12 minutes or until cookies are golden brown. Cool for one minute on baking sheet before removing to wire rack to cool completely.

*My dad doesn’t love raisins, so if I am making these cookies for him, I omit the cinnamon and substitute the raisins for chocolate chips.

Makes about 3 dozen cookies
