This peanut satay dipping sauce is great with chicken or shrimp. I like to serve it as a side with grilled chicken or over lemongrass coconut shrimp and rice.
In a small saucepan, combine:
3/4 cup crunchy peanut butter
1 cup coconut milk
3 tablespoons soy sauce
1 inch piece of grated ginger
2 minced garlic cloves
juice from 1 lime
2 tablespoons sweet chili sauce
Bring all ingredients to a boil and then reduce to simmer, stirring constantly for about 2 minutes. Remove from heat and set aside until using.
Makes 2 cups

1 tablespoon of raspberry vinegar
1 tablespoon of olive oil
1/2 tablespoon salt

1 tablespoon fresh grated ginger
2 tablespoons fresh chopped cilantro
1 tablespoon curry powder
1 tablespoon lemongrass puree
Once mixed, add 1 1/2 lb. of raw medium peeled and deveined shrimp. Coat shrimp and cover for …

Eggs Fantastic is a great dish to serve Christmas morning or for a shower because you can do all the prep work a day or two before and don’t have to be in the kitchen the day of a holiday or event – and it serves a large group.
In a large skillet, on medium heat, cook:
1 12oz package of Jimmy Dean Sausage
1/4 pound chopped mushrooms
1/2 chopped onion
salt and pepper to taste
Cook until sausage is brown and liquid is gone from mushrooms (about 7-10 minutes). Drain any remaining liquid and …

This a classic marsala chicken dish with a slight twist because of the lemon flavor which I find so refreshing. This chicken is great over pasta, risotto, or even a bed of baby spinach.

1 cup flour
2 tablespoons paprika
2 teaspoons salt
1 teaspoon pepper
Meanwhile in a large skillet, on medium to high heat, add 2 tablespoons of butter. Once butter is melted and skillet is hot, add coated chicken to skillet, turning only once. …

This is a great dish to serve at a large gathering, either as a side or main course.  It tastes much richer and heavier than it actually is.
1 teaspoon olive oil
1/2 cup finely chopped onion
2 tablespoons all-purpose flour
1 garlic clove, minced
1 1/2 cups milk
1 bay leaf
1/2 cup (about 2 ounces) crumbled Gorgonzola cheese
3/4 cup (about 3 ounces) grated Parmigiano-Reggiano cheese, divided
1/4 teaspoon salt
2 cups uncooked elbow macaroni (about 8 ounces)
