Roasted Pepper and Prosciutto Pizza

This pizza is a great dish for entertaining. It is so colorful and flavorful, it is sure to impress!

2 red or yellow sliced, roasted bell peppers (can be grilled or broiled)
1/4 lb sliced prosciutto, cut into thin strips
1 cup favorite tomato pizza sauce; try Leigh’s Marinara Sauce
1/4 lb crumbled goat cheese
2 tablespoons chopped fresh basil
olive oil for drizzling
salt and pepper to taste
*herbed pizza dough (recipe to follow) or precooked pizza crust

Preheat oven to 400 degrees. If using homemade dough, roll it out on floured surface, and brush bottom side with olive oil. Spread tomato sauce on pizza and spread goat cheese on top of sauce. Decorate pizza with prosciutto, peppers, and basil. Salt and pepper and drizzle a small amount of olive oil on top. Bake for 12-15 minutes, depending upon how thick the crust is.

*Herbed Pizza Dough:

Mix 1 package of active dry yeast with 3/4 cups hot water and 1 teaspoon sugar. Let sit to foam for about 5 minutes. Combine 2 cups flour, 1/4 cup olive oil, 1/2 teaspoon salt, and 2 tablespoons dried basil, and foamed yeast mixture. Knead on floured surface for about 5 to 10m minutes. Dough should be smooth. Place in oil bowl and cover, allowing dough to rise in a warm place for 1 to 2 hours.
