Cindy’s Chicken Salad

This is one of my favorite recipes to serve at a brunch or shower. It is easy since it is prepared ahead of time and served cold. This salad can be served on toasted bread, a croissant, butter lettuce, or alone. The crunch and color from the celery makes it a very pretty dish.
3 cups diced poached chicken
1 1/2 cups sliced celery
2 tablespoons fresh chopped parsley
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup heavy cream, whipped
*1 cup mayo
1 tablespoon lemon juice
1/2 cup toasted sliced almonds
In a large bowl, toss chicken with celery, parsley, salt and pepper. Gently fold in whipped cream, mayo, lemon juice, and almonds. Refrigerate until chilled.
(Serves 6)
*Since this recipe comes from my mom, she uses the full cup of mayo and it tastes very rich, but I have used lite mayo or reduced the mayo to half to cut calories and fat and still have been very happy with the results.

Leigh–I am impressed with your continued growth with Recipleased. In fact, I just printed one because it looked so tasty. In case you don’t know recognize my name, I am your mom’s first cousin, our mothers were sisters. I haven’t seen you since you were about 10 and now you are a mother. Time flies.
