Cindy’s Chicken Salad
This is one of my favorite recipes to serve at a brunch or shower. It is easy since it is prepared ahead of time and served cold. This salad can be served on toasted bread, a croissant, butter lettuce, or alone. The crunch and color from the celery makes it a very pretty dish.
3 cups diced poached chicken
1 1/2 cups sliced celery
2 tablespoons fresh chopped parsley
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup heavy cream, whipped
*1 cup mayo
1 tablespoon lemon juice
1/2 cup toasted sliced almonds
In a large bowl, toss chicken with celery, parsley, salt and pepper. Gently fold in whipped cream, mayo, lemon juice, and almonds. Refrigerate until chilled.
(Serves 6)
*Since this recipe comes from my mom, she uses the full cup of mayo and it tastes very rich, but I have used lite mayo or reduced the mayo to half to cut calories and fat and still have been very happy with the results.
