Key Lime Pie Recipe

After having lived in Florida for three years, I was able to try many key lime pies. I learned that authentic regional pies are not green in color, but light yellow. This is my favorite key lime pie recipe.

In a large mixing bowl, combine:
3 beaten egg yolks (save the whites)
2 1/4 cups sweetened condensed milk
*1/2 cup key lime juice

Spoon mixture into pie shell (either store bought or made-recipe for pie shell to follow). Bake at 350 for 12-15 minutes. Top either with egg whites or whipped cream (my favorite, but less traditional) and refrigerate.

Egg White Meringue topping:
3 egg whites
1 teaspoon sugar
1 teaspoon key lime juice

Beat all of the above until mixture is frothy and starts to peak.

Whipped Cream topping:
1 cup heavy whipping cream
1 tablespoon sugar
1 teaspoon vanilla

Combine and beat all of the above until mixture starts to peak.

Pie Shell:

2 cups graham cracker crumbs

1 tablespoon sugar

3 tablespoons melted butter

Combine above in a pie pan and press mixture up against the sides of the pie pan with fingers until even crust has been formed. Gently pour in key lime mixture and bake, as directed above.

Serves 8
