This is my husband’s favorite dessert. It is very rich, so a small piece goes a long way. I like to serve it with whipped cream, raspberries or vanilla ice cream. It’s great for a dinner party or even holiday celebration because it can be made the day before.
In a greased springform pan, combine:
2 cups graham cracker crumbs
6 tablespoons melted butter
2 tablespoons sugar

Growing up, my mom always made the best home-made pancakes every weekend. I want to pass on this tradition with my two girls, so I have searched high and low for great pancake recipes, including my mom’s. This one is easy and won’t disappoint. It is my daughter, Avery’s, favorite recipe for pancakes.
In a medium bowl, mix together:
2 eggs, beaten
1/2 cup milk
2 tablespoons melted butter
1 teaspoon vanilla
1 tablespoon sugar
Once combined, add:
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt

This is a great waffle recipe because it is so fast and easy.  It tastes great and there are so many variations and toppings you can do with waffles.  I have added 1/2 cup chocolate chips or topped with my blueberry sauce for a more special breakfast or brunch.  I have also substituted whole wheat flour for the white flour without compromising taste.
In a medium bowl, combine:
1 cup milk

Add the following ingredients into a crock pot:
1 pound skinless, boneless chicken breast, cut into small 1/2 inch pieces
1 cup frozen or fresh corn kernels
1 can condensed cream of potato soup
1 4oz can of diced green chile peppers, drained
2 tablespoons fresh chopped cilantro
1/2 package of taco seasoning mix
3 cups chicken or vegetable broth
Cook on low heat for 4 to 6 hours. Before serving, add 1 cup of the cooked soup mixture to:

Leigh’s Tomato Bisque Recipe

I love tomato bisque, especially when the weather gets colder. This is my absolute favorite soup to make. With the cream and fresh basil it is so rich and flavorful, so can be served for lunch, before for dinner, or as part of dinner with salad or sandwiches.

This pizza is a great dish for entertaining. It is so colorful and flavorful, it is sure to impress!

2 red or yellow sliced, roasted bell peppers (can be grilled or broiled)
1/4 lb sliced prosciutto, cut into thin strips
1 cup favorite tomato pizza sauce; try Leigh’s Marinara Sauce
1/4 lb crumbled goat cheese
2 tablespoons chopped fresh basil
olive oil for drizzling
salt and pepper to taste

After having lived in Florida for three years, I was able to try many key lime pies. I learned that authentic regional pies are not green in color, but light yellow. This is my favorite key lime pie recipe.

I’ve made and tested many pumpkin pie recipes, but this is without a doubt the best pumpkin pie I have ever made.  This recipe comes to me courtesy of my good friend Tina and is so beautiful and rich, perfect for a holiday celebration. The key to this pumpkin pie is the crumbly crust topping which is to so tasty!
Combine until smooth:
15 oz pumpkin mix
14oz sweetened condensed milk
2 egg yolks (save whites for later)
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt

This is a great refreshing dish for a taste of India. It’s easy but tastes like a lot of work went into the dish.  Trader Joe’s has a great garlic naan bread that goes wonderfully with the chicken or I like to serve it with my Toasted Coconut Rice.
Combine all of the following spices in a small skillet and toast for 1-2 minutes.
1 tablespoon paprika
2 teaspoons cumin
1/2 teaspoon cinnamon
1/2 teaspoon coriander
1/8 cayenne pepper

Guacamole

This guacamole is fabulous as a before meal appetizer with tortilla chips or topping tacos, carnitas or burritos! The left over guacamole can be saved in the fridge and kept fresh by adding one or two of the pits from the center of the avocado. I try to use one avocado per person when creating recipe.
